Congrats on getting the car running. If the heat is on all the time the vacuum control switch indash has a rubber section to the ac control vacuum switch that dries out and the air leak let the water valve under the hood pass hot water. You likely need a new switch for the control but to temporarily cut off the heat put the hose from the water valve directly to a vacuum source . Plug the line going to the dash for now. These mcgyvered things will at least cut off hot water going to the heater core until you can do things correctly. That in dash control switch also opens and closes ducts but in the short term this will help you to stay a bit cooler.
